By default, the Sort Orders feature provides relevance as the default option to render the search page and display the initial search results page with an empty search, using your primary index's ranking and sorting configuration (relevance).
If you would like to use another sort order option, such as "Best selling" in descending order, you can add the "Most popular" option, which uses the "recently_ordered_count" attribute for sorting.
However, if you wish to use the "Best selling" (sorting by "recently_ordered_count" in descending order) option by default for a specific collection page, our Shopify plugin does not provide an out-of-the-box solution for this.
